Crab Ragoon

I love these things. I can’t seem to get enough. I could really make a meal out of just these

16 wonton wrappers
4 oz lump crab meat
3 oz cream cheese, softened
1 scallion, white part, finely diced
1 teaspoon grated fresh ginger
3/4 teaspoon soy sauce

Preheat over to 350 degree and place rack in middle.
Spray mini muffin tin with oil.
Gently press the wonton wrappers into tins, making sure bottoms and sides are flish with tin; let edges extend out of cups. Lightly spray wrappers with oil and bake until lightly browned, 6 to 9 minutes
Combine crabmeat, cream cheese, scallion, whites, ginger, and soy sauce in bowl. Using small spoon fill each cup with 2 teaspoons filling.
Bake until filling is heated through, 6 to 8 minutes, Sprinkly with scallion green parts finely diced.
